The best football players on your team’s offense might be your interior linemen and your running backs. Typically in the NFL this is not prevelant (though 2013’s Super Bowl winning Ravens are a great example with Matt Birk, Marshal Yanda, Ray Rice, and Bernand Pierce being great players at their positions). It makes sense strategically the to use your best weapons more often than not and force your opposition to do something to minimize those weapons. This also means you must have balance just like when a passing team must periodically run the ball to keep defensive linemen honest in honoring their run-gap assignments instead of teeing off in a pass rush. Your question presumes there are more bodies, tangled limbs, and a greater chance of fumbling etc.

The truth is that the TV highlights and viewing angles largely mask what running lanes are available and how those big areas to run outside really aren’t that big when compressed by a containment defender.
